In honor World Vegetarian Day, I'm encouraging my patients to put more veggies in their diet. Increasing the amount of vegetables in the diet is particularly important for diabetics. Veggies help you control your blood sugar, lose weight and prevent foot problems from occurring.
Imagine your plate divided as seen in the photo. Half of the plate is filled with non-starchy vegetables, 1/4 is filled with starchy foods, and 1/4 is filled with protein.
Even if you don't have diabetes, it's important to eat healthy and include a large number of vegetables in your diet. Kathy Abascal, who is from Vashon Island, developed the TQI diet in her book "The Abascal Way" for those who were concerned about inflammation, wanted lose weight, and lower their cholesterol. She also advocates filling at least half your plate with non-starchy veggies.
With fall veggies such as wonderful squash of all types, potatoes, beets, and carrots available in food markets and gardens everywhere, here is a recipe that looked really good from Whole Foods "Roasted Vegetable Salad with Citrus-Ale Vinaigrette".
